NATIVE FOOD RECIPE
MESQUITE SUGAR
COOKIES
1 1/2 cup all purpose flour
1/2 cup mesquite flour or mesquite meal*
2 tsp baking powder
1/2 tsp salt
2 eggs
2/3 cup oil
2 tsp vanilla
3/4 cup sugar
cinnamon and sugar
Heat the oven to 400 degrees. Mix all purpose flour,
mesquite flour, baking powder, and salt together in a medium
bowl. In another bowl, beat eggs with a fork until well
blended. Stir in oil and vanilla. Add sugar and stir
until mixture thickens. Add dry ingredients to egg mixture
and stir until well blended. Drop dough by rounded
teaspoon 2 inches apart onto an ungreased cookie sheet.
Put a small amount of cinnamon and sugar into a small dish.
Moisten the bottom of a glass. Press the bottom of the
glass into the cinnamon sugar mixture and flatten the cookies
with the bottom of the glass. Bake 7 to 9 minutes.
Makes about 3 dozen cookies.
